Carmody Cheese begins its life in Sonoma County California, at Bellwether Farms. The milk of Jersey cows is the supreme ingredient in this wonderful cheese. Pasteurized and lightly pressed, this cheese is stored for just 4 to 6 weeks, making it a youngster as far as cheeses go. Its light yellow interior darkens as you reach the hard yellow rind and looks similar to Havarti cheese with its small pocks and crater marks. Carmody cheese has a semi-firm texture with a fresh buttery flavor, which can compliment any dish. Carmody’s sweet and sharp flavors get stronger with age, making this cheese very versatile. It slices easily, with slight fragmentation, due to the fact this cheese is pressed very lightly so as not to disturb the curds. It has a very mild scent and is not an overwhelming cheese like Jack or Parmesan.
Younger carmody cheese is known for its smooth buttery flavor and can be used in cheese dishes such as potatoes au gratin, mac and cheese, or enjoyed with your favorite cracker or a freshly baked baguette. More aged carmody cheese pairs well with pasta’s and other pasta based dishes. Finely grate the aged carmody and sprinkle it over any pasta dish to add a sweet and sharp kick. Especially popular with kids because of its mild and sweet flavor, an aged carmody grilled cheese is a welcome lunch time treat.
This artisanal cows milk cheese is made from specific cows known as “Jersey” or “Jersey’s” cattle. They were originally bred in the British channel island of Jersey. This interesting breed of cow is popular because of the high butterfat content in its milk. Jersey cattle have a lower bodyweight than their Holstein relatives, and only weigh about 800 to 1200 lbs. Due to this fact, Jersey cows have a much lower maintenance cost associated with raising them. They are calm and docile animals, with a great disposition and are often recommended for first time owners and or marginal pasture area. Their milk is used to produce this wonderful carmody cheese.
